We’re reluctant to preach the merits of reducing food waste only because it’s often said without a lot of meaning or practical advice. But here is the antidote to empty advice - a book full of inspired veg-centric recipes, with waste tips on nearly every page. Some of the recipes include those often discarding ingredients like beet tops and stale bread, and turn them into wonderful and energizing meals. But mostly, sustainability is approached from the perspective of storing your food, ways of using up leftovers, and keeping food fresh for longer, so it goes in our bellies with glee, rather than in the compost bin.
